Ingredients
1 1/2 lb boneless pork ribs
2 inches fresh ginger root, thinly sliced
1 green onion, cut into 2-3 inches long pieces
1/2 cup sake
4 Tbsps sugar
3 Tbsps mirin
5 Tbsps soy sauce
Method
Heat a little oil in a large skillet and saute the pork on medium heat for a few minutes.
Remove the pork from the skillet and put on paper towels.
Boil 4 cups of water in a large pan and add ginger, green onion, and pork.
Simmer the pork for about 2 hours on low heat.
Drain the pork and cut into about 1 1/2 inch thick blocks.
Put sake in a large pan and bring to a boil on medium heat.
Add 2 cups of water, mirin, and soy sauce and bring to a boil again.
Add boiled pork and turn down the heat to low.
Put a drop lid and simmer the pork until the liquid is almost gone.
